Quick Roasted Tomato and Chicken Pasta

1 x packet Angel Hair Slim Pasta
6 x Cherry Tomatoes
100gm Marinated Chicken, sliced into strips
A handful of chopped Fresh Flat Leaf Parsley
2 cloves of Fresh Garlic (or 1 x teaspoon of Crushed Garlic)
2-3 teaspoons Extra Virgin Olive Oil (EVOO)
Cracked Pepper

Place tomatoes, garlic, cracked pepper and olive oil in a small baking dish. Bake in a hot oven (180’) for approximately 15mins or until skin of tomatoes splits or shrivels.
Meanwhile, with the tomatoes in the oven, prepare the Slim Pasta as per directions on the packet, and have your parsley and chicken ready to combine together.
When the tomatoes are ready, take out of the oven and put the Slim Pasta, Chicken and Parsley into the baking dish and stir to combine all ingredients and coat it in the juices from the tomatoes.
Arrange on your plate and drizzle with a little more EVOO and cracked pepper to taste and enjoy!

** Marinated Chicken

Juice of half a lemon
1 x tablespoon Crushed Garlic
1/2 x teaspoon Crushed Ginger
2 x teaspoons Soy Sauce (optional)
A dash of Sesame Oil
Cracked Pepper to taste

Combine all ingredients in a bowl and whisk together. Marinate your chicken breast for approximately 15-20 mins before cooking.

This will marinate up to 4-5 chicken breasts. **
