Kashmiri Pulao

Ingredients

    * 500gms Long Grain (Basmati) Rice
    * 100gms Onion sliced vertically
    * 5gms Cinnamon (dalchini)
    * 5gms cardamom (Elaichi)
    * 5gms cloves
    * a pinch of turmeric powder
    * 1gm saffron (kesar)
    * 10 ml Milk
    * 20gms walnut
    * 20gms cashew nut
    * 1litre water
    * 50gms oil
    * salt

Methods

    * Wash and soak rice.
    * Heat oil and fry onions till they turns golden brown.
    * Fry all the spices along with turmeric powder.
    * Add rice and sauté.
    * In luke warm milk add half-saffron and dissolve it properly
    * Add hot water and mix well.
    * Cook for sometime.
    * Garnish 'Kashmiri Pulao' with fried onions, raisins & cashew nuts.

Chilli Paneer

Ingredients

    *  Paneer

    * 2 tsp Salt
    * 1 Egg
    * 1/2 cup Corn Flour
    * 1 tsp Ginger-Garlic Paste
    * 2 cups Coarsely Chopped Onions
    * 2 tbsp Sliced Green Chillies
    * 1 tbsp Soya Sauce
    * 2 tbsp Vinegar
    * 1/4 tsp Ajinomoto
    * Oil for frying
    * Little Water

Methods

    * Cut the paneer into small pieces
    * Marinate the paneer pieces with cottage cheese, 1 tsp salt, egg, corn flour, garlic, ginger and water
    * Heat oil in a pan and fry the marinated paneer pieces until they turn golden in color.
    * In another pan, heat 2 tablespoon oil and fry the onions for half a minute.
    * Add the green chillies, salt, soya sauce, vinegar, ajinomoto and the fried paneer cubes.
    * Mix well, and garnish the chilli paneer with finely cut spring onions and coriander. Gorge on this delectable dish on Rakhri 2011.

Mixed Fruit Raita

Ingredients

    * 2 cups of Curd (yogurt)
    * 3 Bananas
    * 1 Pineapple( small)
    * 2 Apples
    * 1 Ripe Mango
    * 1 cup of Pomegranate seeds
    * Chopped coriander leaves
    * Sugar to taste
    * Salt to taste
    * Black pepper powder

Methods

    * Stir the curd, mix salt and sugar, (if the curd is too thick add little milk or water).
    * Cut all fruits in small cubes and add to the curd.
    * Shower black pepper on  Raita for taste.
    * You can have it after the main course of your dinner or lunch.
